    • Let it cool before serving or enjoy a hot piece with vanilla ice cream.

    Spiced Oatmeal Creme Pie Cake

For a little more taste, this variation adds cinnamon, nutmeg, or pumpkin spice to the layer of oatmeal cookies. Spiced version is typically made with both the cake mix and filling spiced enough to make you feel it every bite. The cake can be topped with frosting or a glaze. You can add other ingredients, commonly – raisins or nuts.

    Ingredients for the cake layers:

    • 1 1/2 cups all-purpose flour
    • 1 cup rolled oats
    • 1 cup sugar
    • 1 tsp baking powder
    • 1 tsp baking soda
    • 1 tsp ground cinnamon

    • In another bowl, beat the eggs and add milk, and butter (or oil). Blend well.
    • Gradually add the wet ingredients to the dry ones and blend until you get a smooth texture.
    • Pour the batter into the pan and bake for 25-30 minutes. Use a toothpick to check if it’s done.
    • Let the cake rest and cool completely.
    • In the meantime, prepare the filling by combining butter, sugar, eggs, flour, vanilla, and milk in a saucepan. Stir the mixture over low heat.
    • Keep stirring continuously until the mixture thickens and let it cool in the fridge.
    • Horizontally cut the cooled cake in half and spread the filling over the bottom layer.
    • Place the top layer back on and frost the top and sides with cream cheese frosting or buttercream.
    • Add whatever toppings you have prepared.

    Fruit-Filled Oatmeal Creme Pie Cake

For extra texture and sweetness, the oatmeal cookie layer is blended with dried fruit, raisins, cranberries, or apricots. Usually prepared with a bottom layer made of an oatmeal cookie crust, a layer of dry or fresh fruit filling and a creamy custard on top. Toppings can include fresh or dry fruits, sugar powder, apple sauce, honey or chocolate.

    Ingredients you can use:

    For the crust:

    • Rolled oats
    • Flour
    • Sugar
    • Butter
    • Salt
    • Baking powder

    The fruit filling:

    • Fresh or canned fruit (apples, blueberries, pineapples)
    • Sugar
    • Cornstarch or flour to thicken the texture
    • Spices (cinnamon or nutmeg)

    For the custard:

    • Eggs
    • Sugar
    • Milk
    • Cornstarch or flour to thicken the mixture
    • Vanilla extract
    • Salt

    Instructions

    • Begin by preparing the oatmeal cookie crust.
    • This is typically done by mixing together rolled oats, flour and sugar with butter and other seasonings to form a dough.
    • The dough should be pressed into a greased baking pan and baked until golden brown. While the crust is baking, prepare the fruit filling.
    • Cook and puree fresh fruit, or used canned ones. Depending on the recipe, you may need to add sugar, cornstarch, or other ingredients to thicken the filling.
    • Prepare the creamy custard by mixing eggs, sugar, milk, and a thickener of your choice (cornstarch or flour).
    • Cook the mixture on the stovetop until thickened.
    • Once the crust is done baking, remove it from the oven and let it cool.
    • Spread the cooled fruit filling on top of the crust, then pour the custard on top of it.
    • Return the pie to the oven and bake until the custard is set.
    • Once done, remove it from the oven and let it cool before adding toppings, slicing and serving.
